In 2017 I took a deep dive into old cookbooks, focusing on seafood. It was a marriage of my love of history with my family history in the fisheries. I gathered hundreds of recipes from printed cookbooks and sorted them by fish species to create a volume of “fishstory” that I called: From Head to Tale

From Head to Tale explores five centuries of Western seafood history through the lens of European and North American cookbooks. Cooks, foodways students, historical reenactors and seafood lovers will find From Head to Tale packed with information and fun facts beyond just the recipes.
